Calabrian Whipped Feta & 8 MIN Egg on Toast

 
 

INGREDIENTS 

Organic and Free Range when possible

- Sourdough Toast (1 slice)

- Calabrian Chile Whipped Feta (2 tbs)

- Arugula (1 handful)

- 8 Minute Boiled Egg (1-2 eggs)

- Sea Salt, Pepper (to taste)

-Olive Oil (1 tbs)

PROCESS

-Blend 1/2 cup fresh feta, 1 tbs olive oil, 2 tbs lemon juice and 1 tsp Calabrian Chile paste until smooth. 

-Bring water to a boil, poach or hard boil egg 7-8 minutes, let cool. 

-Spread feta mixture on toast, top with arugula, slice egg, salt and pepper to taste. 

This is on our weekly menu. Simple and loaded with fuel. 8 minutes = the perfect boiled egg. Slow burn, fermented carbs, lean protein and monounsaturated fat in one perfect toast.
