Vegan Pitaya Chia Parfait

 
 

I eat some version of this every single day. Breaking an overnight fast with fruit is a good way to gently get the body’s systems going. Fruit is easier on the digestive system and takes less energy for the body to process.

INGREDIENTS

- Coconut Vanilla Bean non-dairy yogurt (1/2 cup)

- Pitaya Chia pudding (1/2 cup)

- Organic Blueberries

- Organic Raspberries

- Organic Strawberries

- Cocao Nibs (2 tbs)

PITAYA CHIA PUDDING

Blend:

- Frozen Pitaya 1/2 cup)

- Unsweetened Coconut Cream (1/2 cup)

- Raw, Organic Honey (2 tbs)

- Water ( to desired consistency)

Add & Mix:

Pitaya Smoothie from above with 2 tbs raw chia seeds in medium sized mason jar. Cover and chill until set

NUTRITIONAL INFORMATION

Chia seeds are a nutritional powerhouse. They are loaded with omega-3, magnesium, antioxidants, iron, calcium and potassium. An excellent source of protein and fiber makes them a excellent post workout choice. High water soluble fiber content makes chia a great natural way to maintain a properly functioning digestive system.
